Cup of Ambition Easy Sprinkle Cookies

Today’s the day! I’ve officially launched Cup of Ambition! I couldn’t think of a better way to celebrate than by making a big batch of sprinkle cookies. Soft, buttery, colorful and delicious - these have been a long time fave. Probably because they are so easy to make and come together so quickly.

My cookies are based on Everyday Annie’s soft sugar cookies, just minus the frosting and plus the sprinkles. I’ve been using Annie’s recipe for about a decade, and there isn’t much tinkering you need to (or should) do to it - it’s a pretty perfect recipe.

Adapted from Everyday Annie’s Soft Frosted Sugar Cookies

Quantity: ~18 cookies (can easily be doubled or tripled)

Time: ~2 hours

Ingredients: 

  • 180 g (1 and 1/2 cups) all purpose flour

  • 6 g (1 and 1/2 teaspoon) baking powder

  • 1 stick butter

  • 99 g (1/2 cup) sugar

  • 1 large egg

  • 8 g (1 and 1/2 tablespoons) vanilla 

  • 1/4 teaspoon salt

  • 1/4 cup sprinkles, plus 1/2 cup for rolling

Process:

Line baking sheets with parchment paper (or silicone baking mats).

In a medium bowl combine the flour, baking powder and salt, and whisk together to blend.  

In the bowl of a stand mixer, combine the butter and sugar and beat together on medium-high speed until soft and fluffy (2-3 minutes).  Add the eggs and vanilla and mix to combine.  

Add the dry ingredients, mixing on low just until incorporated and evenly mixed.  Add the sprinkles and then mix until just incorporated. 

Scoop out dough into balls using cookie scooper. I use a 1.5 tablespoon scoop. Chill the dough for 30 minutes.

Preheat the oven to 350˚ F. 

Before baking, roll each ball of cookie dough in the remaining sprinkles, pressing to ensure that the sprinkles adhere. You only need to cover the top. 

Bake for 9-11 minutes, until puffy and starting to turn golden brown around the edges. In my oven, I bake for 10.5 minutes.

Tips:

  • Not everyone loves sprinkles - you can adjust the sprinkle quantity to suit your taste.

  • Feel free to use your favorite blend! I made this one by combining a few different sprinkle blends.

  • If you don’t have a cookie scoop, I highly recommend getting one. See my ‘Resources’ page for more info. I use a 1.5 tablespoon cookie scoop for these cookies. If you want larger cookies, use a 2 tablespoon cookie scoop and increase the bake time.
